The beautiful Porta di Basso restaurant is housed under the lime and stone vaults of an ancient oil mill overlooking the sea, where the nature of the elements in the hands of the chef gives life to a surprising sensory experience. The surprise is all in simplicity, where the theme is the subtraction of the excessive and using only three elements that enhance each other in the game of contrasts. The dishes have a lively and greedy chromaticity articulated in shapes and textures that find a satisfying balance between them. The unpredictable generosity of the sea dialogues with the certainty of the land in a language that expresses the chef's creativity, interprets the territory in a contemporary way and speaks of Puglia and the Mediterranean, a melting pot of cultures and an exchange of knowledge and flavours. Domenico Cilenti learned authentic and healthy tastes from his parents, simple people who used the garden's fruits and homemade pasta in the family agritourism. Technical studies and experiences abroad have allowed for a broader look at one's territory, the true protagonist of the minimal and creative cuisine in "porta di basso". The technique has made it possible to give new life to simple products: poor fish, vegetables spontaneously and the extra virgin olive oil that unites and envelops everything.
